Protein Pancakes made with Chocolate Vega Sport Protein and topped with PB thinned out with almond milk (no recipe, just threw things together). Roasted kabocha filled with Greek yogurt chia frosting and topped with some corn puffs for fun. Soooo goooood. I’m OBSESSED with kabocha!!!! I had a hankering for pizza, adapted the @powercakes pizza and based my own recipe off of hers, since there were some things I didn’t have/want to use. Not sharing the recipe yet because I think I may have tapped into something here for a high protein, low carb but crusty crust with a few tweaks. The edge was like typical pizza crust, but the centre was softer and I think I know just the adjustments I need to make to fix that. Looks like I’m just going to have to eat more pizza!! What do you do when you can’t get to your favorite post-workout microwave protein muffin recipe and are hungry for one after a mish mash leg day at the gym? You come up with one yourself! Keeping my favorite protein muffins from @lasmoothiegirl and @powercakes , I whisked together 1/2c egg whites, 2 tbsp pumpkin, 1 tbsp almond flour, 1/2 tsp baking powder, a pinch of baking soda, caramel stevia, vanilla and a whole lot of cinnamon. Microwaved for 5 minutes and topped with a blob of cashew butter, this beautiful little cake was nothing short of delicious! So moist, not really eggy either like these things can be, and it didn’t deflate too much.
