#lunch today was my first attempt at a gluten-free savory Wafflewich. It was delicious, but the recipe isn’t perfect and definitely needs a second go, so I won’t be sharing it just yet! The waffles had great flavor, but because I used coconut flour they were too fluffy. They stuck to the pan a bit and came apart slightly, so I waited for them to cool before carefully peeling them from the waffle iron, then I threw them in the toaster which saved them, I think. My Wafflewich had tuna mixed with chopped onion, 1tbsp Greek yogurt, nooch, sriracha sauce and walden farms honey Dijon dressing. It wasn’t a total fail, I finally ate a sandwich for lunch, I’ve been craving one forever! It held up for the most part, and it’s high fiber, low cal and low carb with a nice dose of protein!
