Went for my first run after the Detroit Free Press this morning and it was totally kick ass! Fastest I’ve ever run, like I don’t know where this speed is coming from but I’m loving it! 5 miles in just over 45mins, 9:07 avg pace. Beautiful, ground was wet from the rain last night, it was dark and quiet, wore my race shirt and felt invincible. As great as I felt, I couldn’t wait to get home to this little breakfast experiment gone awesome! Yesterday, I made TVP ‘oatmeal’, and last night I decided to make overnight oats, but noticed my unopened bag of TVP chunks in the cupboard. Overnight TVP ‘oatmeal’ was born. 1 serving TVP chunks in a jar with 1 tbsp ground chia seed, 1/2 sliced banana, 1 cup almond milk plus some water, vanilla/cinnamon/nutmeg/stevia left in the fridge overnight. The TVP soaked up the milk and water nicely, and got all chewy and delicious. I topped it with raspberries, blackberries and some cocoa cherry almond granola by Nature’s Habit. SO GOOD!!!!
