Cookie Dough Overnight Oats with a Cookie Dough Crumble topping! This morning’s breakfast was probably my favorite overnight oat parfait variation ever, such a treat! Last night I prepped my oats: 1/3c oats mixed with vanilla stevia, cinnamon and 2/3c to 1c of water, microwaved for a few mins, stir, do it again until most of the liquid is gone, then I add my flavorings. In went some vanilla, more vanilla stevia, chia seed and the secret ingredient for cookie dough oats: a tiny splash of banana extract! Usually mashed banana gives that cookie flavor, but I didn’t want the sugar/carbs of banana when I didn’t need them since it’s a rest day for me. I took a gamble, added banana extract and the results were even better than what I imagined. It just adds that extra oomph, almost the buttery kind of sweetness of raw cookie dough. Then I added 1 tbsp chia seed and 1/3 to 1/2 c almond milk, in the fridge overnight. In the morning, I mixed a serving of Greek yogurt with vanilla stevia, vanilla extract and cacao nibs, then got to layering! For the cookie dough crumble: 1 tbsp coconut flower, vanilla stevia, almond milk. I didn’t measure I just kept adding milk until it made little crumbles, then threw in cacao nibs and then a few dark chocolate chips on top. The coconut flour cookie dough crumble is so good I’d honestly my it up and just eat it straight with a spoon. Im actually really glad I decided to give that a shot this morning bc I crave cookie dough all the time and this stuff tastes amazing, totally hit the spot!!!!
